Protein Breakfast Bowl


Ingredients:

4 medium potatoes

1 Tbsp of olive oil

1 tsp garlic powder

1 tsp salt

1 cup cooked brown rice

1 cup fresh spinach

1/3 cup frozen corn, thawed

1/4 cup onion, chopped

Salsa of choice (red or green)




Directions:

Preheat the oven to 400 degrees. Scrub the potatoes and cut them into about 1/2 inch cubes. Toss the potato cubes in the olive oil and sprinkle with the garlic powder & salt. Put the potatoes on a baking sheet (use parchment paper if you have it, but it's not necessary if you don't). 


Cook for about 15 minutes, remove from the oven and turn the potatoes over so that they brown evenly. Return to the oven for another 15 minutes or so. Check them to see if they are done to your liking and set aside. 


To assemble your breakfast bowl, add the desired amount of potatoes, brown rice, spinach, corn, onion and top with salsa. Serve warm. 


Good to Know:


One of these breakfast bowls has over 15 grams of protein. That might surprise you since it has no meat, beans, tofu, etc. The brown rice and potatoes are very filling as well. 


Keep the potato skins on them because that’s where a good amount of potassium and vitamin C are! 


Lastly, good starches like potatoes and brown rice are so good for you. Starches are not the enemy as some people have tried to convince us they are.
