Overstuffed Breakfast Burrito/Tacos


One of my favorite breakfasts is a breakfast burrito which sometimes turns into a taco because I stuff it too full. Here are the basic ingredients I recommend but use your imagination (and your leftovers!) and come up with some awesome combinations.


Ingredients:

1 medium potato

Handful of spinach

Salsa

Tortilla


Optional Ingredients:

Leftover beans

Any other leftover veggies


Directions:

Skillet on medium, once hot place rolled burrito in pan on one side until golden brown and repeat for other side


Good to Know:


Use any potato, bean, even enchilada casserole leftovers to create a burrito or breakfast tacos. Add salsa if desired.
