This is the last day of your first week. Check the fridge to see what needs to be eaten. You’ve prepared some great meals today, so skip the prep and cooking and have some leftover beans, enchilada casserole, macaroni casserole, etc. You’ll feel so virtuous not wasting leftover food and so many of these dishes taste better warmed up because the flavors have had time to meld and everything tastes great!
If you don’t have any leftovers, maybe do another big salad? At our house, we sometimes like to put out hummus, olives, pickles, crackers, etc and everyone makes a plate of their favorites.

Did you know that about 30% of the food produced ends up as food waste and most of that goes to the landfill? This contributes to greenhouse gasses. Globally, if food waste could be represented as its own country, it would be the third largest greenhouse gas emitter, behind China and the United States, so not wasting food has a bigger impact than just wasting your own money.
