Garlicky Savory Sautéed Cabbage


1-2 tablespoons extra virgin olive oil (or vegan butter)

2 cloves garlic, minced

1 (10-ounce) bag of shredded green cabbage (about 5 cups)

salt, to taste

dried thyme, to taste (optional)


In a large skillet , heat olive oil (or vegan butter) over medium-high heat. Add the minced garlic and shredded cabbage (may need to do this in stages once some cabbage has wilted down already, depending on how big your pan is).

Sauté for about 10 minutes, stirring occasionally, or until cabbage is cooked down and tender.

Top with a sprinkle of sea salt and thyme (if using).

Good to Know:

Cabbage, especially red cabbage, seems to raise levels of beta-carotene, lutein, and other heart-protective antioxidants. It also helps lower something called “oxidized” LDL, which is linked to hardening of the arteries. And since it eases inflammation, it can help prevent heart disease.
