Garlic Sauteed Spinach

Ingredients:
1 1/2 pounds baby spinach leaves
2 tablespoons olive oil
2 tablespoons chopped garlic (6 cloves)
Salt (to taste)
3/4 teaspoon freshly ground black pepper
Lemon
Directions:
Heat the olive oil in a large skillet or pot over medium heat. Add the chopped garlic and sauté for about a minute, stirring to make sure it doesn't get too brown
Add the spinach and gently stir to mix with the garlicky olive oil. Cover the pot and cook for about 2 minutes. Add the salt and black pepper. Stir the spinach and then cook a couple more minutes to make sure the spinach is wilted. Remove from heat, add a squeeze of fresh lemon juice and if desired, another sprinkle of salt. Serve hot.
