Broccoli Rice Casserole

Ingredients:
1 small onion, chopped
½ cup celery, chopped
3 ½ cups of broccoli, steamed & chopped
½ tablespoon vegan margarine
1 cup vegan cheddar cheese shreds
Brown Gravy (recipe on page- 71)
3 cups cooked brown rice
Directions:
Sauté onion and celery in vegan margarine 3-5 minutes. In a large bowl, combine cooked onion and celery with the cooked broccoli, then stir in cheese, gravy and rice. Pour into a 9 inch baking dish. Adjust the salt and pepper to taste.
Bake uncovered at 325 degrees for 25-30 minutes.
Good to Know:
This is the casserole that made me love broccoli. Always a star at the Thanksgiving dinner table, but laden with dairy and chicken typically. Since I loved it so much, I veganized it and my family absolutely loves it! You already know broccoli is super healthy, too!
