Breakfast Burrito Bowl


Ingredients: 3 potatoes, cubed

1 onion, diced

3 cloves of garlic, minced

1 Tablespoon olive oil

Sea salt

Black Pepper

Garlic Powder

Paprika (optional)

A handful of spinach

Optional Ingredients:

Leftover beans


Directions:

Preheat oven to 400 degrees


Dice potatoes, chop onion and garlic. Spread out on a nonstick baking sheet, mix with olive oil and season with black pepper, paprika, and garlic powder


Bake potatoes on 400 for 30-40 minutes or until crispy


About 10 minutes before potatoes are done, stir in spinach and continue to bake. The spinach will wilt and mix in with the veggies.


Good to Know:

This is basically a burrito in a bowl, without the tortilla. If you are eating this at work, a bowl might be easier to make ahead and transport. You could eat at room temp or microwave it for 30 seconds or so.
