Bountiful Breakfast Hash


Ingredients:

1 tablespoon olive oil

1 onion, chopped

1 green bell pepper, chopped

1 carrot, chopped

1 jalapeno, chopped

½ teaspoon garlic powder

½ teaspoon ground cumin

½ teaspoon ground smoked paprika

1 cup of pinto beans (if you don’t have beans leftover, either leave them out or use canned)

Leftover home fries

Leftover brown rice

Leftover corn

2 cups spinach, chopped


Directions:

Heat olive oil over medium heat in a skillet. Add chopped onions and bell pepper and sauté for about 5 minutes. Next, add the chopped carrot & jalapeño. Add spices (garlic powder, cumin, smoked paprika) and stir to incorporate. Cook until the carrot is tender. Next add the rest of the ingredients except the spinach. Cook until everything is heated than add the spinach. Just cook until the spinach is wilted. Top with salsa! 


Good to Know:

This recipe is great to make at the end of your week so you can use up any ingredients that you have in the fridge: potatoes, rice, beans, whatever sounds good to you. It makes a very nutritious breakfast or brunch and helps make sure you don’t waste food. You could even roll it up in a tortilla if that sounds good to you. Have fun with it!
