Big Beautiful Superfood Salad w/Sauteed Tofu & Ranch


Instructions:


Tofu Ingredients:

1 package extra firm tofu, drained in a clean cloth or paper towel

Olive Oil

Garlic powder

Salt


Salad Ingredients:

2 cups Kale/Romaine/Spinach

¼ chopped apple

3 pieces of tofu, cubed

1 tablespoon pumpkin seeds

1 tablespoon raisins


Optional Salad Ingredients:


¼ Avocado, chopped

1 tablespoon chopped walnuts


Dressing Ingredients:


1 cup vegan mayonnaise

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

2 teaspoons parsley, chopped

1/2 cup unsweetened soymilk


Dressing Directions:

Whisk all ingredients together and chill before serving. Add a little more soy milk if you need to thin the dressing.


Good to Know:

People tease vegans about eating nothing but salad. By now you know that is just not the truth! BUT, if you use healthy and delicious ingredients, a salad can be very filling and will give you so much energy. Use your imagination when choosing your ingredients. I like to be sure to include nuts, seeds, tempeh or tofu, a little something sweet like cranberries or raisins, among other ingredients. Look and see what’s in season and on sale. Grate some beets or sun-chokes! Take your time eating your salad and use your fork to pair different pieces of the salad to see what combos you like. Think about how you feel after eating it.
